Picnic in the woods made me feel right at home as I escaped the heat of the city and got up the mountains for a bit of fresh air.
Lentil salad: Cooked lentils mixed in with onions, garlic, tomato, aubergine and courgette all fried in olive oil until cooked. Before adding veg to oil put in some turmeric and cumin. Add in a chopped boiled egg at the end or toasted nuts for extra protein. Simple.
