Quinoa Stuffed Peppers

-Pre heat oven to aprox 180 then pop halved and de-seeded peppers in for aprox 20 minutes.
-Cook quinoa in stock. For the last few minutes of the quinoa cooking throw in two cloves of crushed garlic.
-Fry onions, courgettes and mushrooms.
-Once both the quinoa and veg are cooked mix together and add 3 sundried tomatoes chopped up. Feta cheese is also really nice added in if you can tolerate cheese.
-Pile the mixture into the halved peppers and cook in the oven for 10-15 minutes
-Serve with your favourite veggies (mine is steamed broccoli)
